This recipe was developed by Kristen Mixter, bar manager at Tipo Restaurant in Portland.
Bluet Gin Fizz

Makes 1 drink
1 ounce gin
½ ounce lemon juice
½ ounce simple syrup
¼ ounce elderflower liqueur
1 egg white
2 ounces Bluet
Glass: Tom Collins
Garnish: fresh blueberries
Combine gin, lemon juice, simple syrup, elderflower liqueur, egg white, and ice. Shake well. Strain ice and shake again. Pour contents of shaker into glass filled with ice and slowly pour the Bluet down the side of the glass. Garnish with blueberries if desired.
