Makes 1 Cup
Sofrito is an aromatic mixture of herbs, fruits, and vegetables used as a base ingredient in many Latin Caribbean cuisines.
1 cubanelle pepper or green bell pepper
1 small onion, peeled
2 cloves garlic, peeled
½ bunch cilantro
Place all ingredients in the bowl of a food processor. Puree until you have a chunky but homogenous mix. Store in a glass jar in the fridge. The sofrito will keep for a month if you clean the lid well every time you open the jar.
