Fennel, Apple and Orange Salad
2 fennel bulbs, trimmed and thinly sliced
2 Honeycrisp apples, thinly sliced
1 shallot, finely minced
1 cup thinly sliced radishes (optional)
Juice of 1 orange
2 tablespoons extra-virgin olive oil
Combine fennel, apples, shallot, radishes if using, orange juice, olive oil and a healthy pinch of ground mace. Toss well. Season with salt and pepper. Toss once more. Serve immediately.
