The Earl Grey

2 oz gin
3/4 oz fresh lemon juice
3/4 oz Earl Grey simple syrup
3 dashes of lemongrass bitters
lemon wheel for garnish
Earl Grey Simple Syrup
2 cups sugar
1 1⁄2 cups cold water
2 tablespoons corn syrup
4 good quality Earl Grey tea bags
Mix all ingredients over ice in a cocktail shaker and strain into a coupe glass. Garnish with a lemon wheel
Earl Grey Simple Syrup
Combine the sugar, water, and corn syrup in medium saucepan and cook over medium heat for about 5 minutes, until all the sugar is completely dissolved. Once the sugar just comes to a boil, lower to simmer and add the tea bags. Continue to cook on low for 5 minutes. Turn off heat and let sit and steep for at least 30 minutes or longer. When cool, pour into a storage container or squeeze bottle and refrigerate until ready to use.
