Ingredients

  • 1 cubanelle pepper or green bell pepper
  • 1 to mato
  • 1 small onion peeled
  • 2 cloves garlic peeled
  • ½ bunch cilantro

Instructions

  • Place all ingredients in the bowl of a food processor. Puree until you have a chunky but homogenous mix. Store in a glass jar in the fridge. The sofrito will keep for a month if you clean the lid well every time you open the jar.
