Slice tomatoes about 1/4 inch thick.
In a small bowl, combine the flour or bread crumbs with the spices. In a medium bowl, beat the eggs.
Dip a tomato slice into the eggs. Dredge the dripping tomato slice in the flour or bread crumb mixture and cover it completely. Set aside. Repeat for all tomato slices.
In a large frying pan, heat cooking oil over medium-high heat.
Place covered tomato slices in the pan and fry for about 2 minutes per side. They should look slightly browned.
Set on paper towel–lined plate until ready to use.
