Ingredients

  • 2 oz Bimini Coconut gin Handcrafted by Round Turn Distilling in Biddeford
  • ½ oz maple syrup
  • ¾ oz fresh lemon juice take some peel for garnish
  • 6 fresh mint leaves plus an extra sprig for garnish
  • 1 small sprig of fresh thyme plus an extra sprig for garnish
  • Splash of club soda optional, for a lighter “spritz” style smash

Instructions

  • In a cocktail shaker, add the mint leaves, thyme sprig, and lemon juice. Gently muddle with a muddler or the back of a wooden spoon for about 15 seconds to release those refreshing herb oils and juice. (Your kitchen will smell like a spring garden!)
  • Add the gin and maple syrup to the shaker. Fill the shaker with ice cubes, then put on the lid and shake vigorously for 15 seconds. The shaker should get nice and cold (and your hands might, too!).
  • Put a handful of crushed ice into a rocks glass (or use ice cubes if that’s what you have). Strain the shaken cocktail into the glass over the ice. If you like a spritzier drink, top with a splash of club soda.
  • Slap a fresh mint and/or thyme sprig between your palms (this wakes up the aroma) and tuck it into the glass as garnish. Add a lemon twist if you’re feeling fancy. Now sip and enjoy – it’s like tasting Maine springtime.
