This wonderful time of year brings the joy of picking more strawberries than you can possibly eat, and we have a perfect recipe from Chef Josh Berry to help you make the most of this abundance. His recipe for Roasted Strawberries is an easy way to turn your surplus into a multi-use condiment that enhances their flavor and adds a deep sweetness to your recipes.

Ingredients

  • 2- pints washed strawberries stems removed
  • 1 Tbsp Sugar

Instructions

  • Preheat oven to 400-degrees
  • In a bowl, toss strawberries and sugar
  • Place strawberries in a deep casserole and cover with foil
  • Bake for 15-minutes
  • Remove foil and bake for an additional 5-minutes, until browned

Chef Josh recommends using these roasted strawberries in your favorite strawberry shortcake recipe, spooning the syrup into a mezcal margarita (where the smokiness plays well with the spirit), or spooning over vanilla gelato or yogurt.
