Ingredients

  • 4 cups of fresh arugula
  • 2 cups of watermelon cubes
  • 1 cup of feta cheese crumbled
  • 1 cup of cherry tomatoes halved
  • 2 shallots thinly sliced
  • 1 fennel bulb shaved thinly using a mandolin
  • A small handful of fresh basil leaves

For the Lime-Honey Dressing:

  • Juice of 2 large limes
  • ½ cup of extra virgin olive oil
  • 2 tablespoons of honey
  • Salt and pepper to taste

Instructions

  • First, prepare the dressing. In a small bowl, whisk together the lime juice, honey, salt, and pepper. Gradually whisk in the olive oil until the dressing is well combined. Set it aside.
  • In a large bowl, combine the arugula, watermelon cubes, cherry tomatoes, thinly sliced shallots, and shaved fennel.
  • Drizzle the salad with the lime-honey dressing, and gently toss to ensure that everything is well coated.
  • Sprinkle the crumbled feta cheese over the salad.
