What do microdosed THC and Bundt cakes have in common?
Pot + Pan in Portland, that’s what.
Microdosing is the practice of taking a small dose of a substance with the goal of feeling just a slight effect. Studies show the process can reduce anxiety, boost creativity, and enable focus, but doesn’t make a human feel high. While the concept has roots in the use of psychedelic drugs like LSD, assertions about microdosing benefits are now buzzing around the cannabis industry as technology matures for both extracting pure THC distillates and measuring how much THC is in an edible product. While a body’s mileage from any dose of THC will vary with size and metabolism, a generally accepted microdose of THC is 2.5 milligrams.
Yes, you can just cut a 10-milligram gummy into four pieces to roughly get to this level of THC. But what if you had an edible that was both specifically dosed and made purposefully delicious to achieve the same end? Maybe something the size of a Hershey’s Nugget?
Pot + Pan is a female-founded, mom-run, craft culinary cannabis company on a mission to make food-forward edibles in a variety of potencies that can be wholly savored as a treat, like you would a slice of your grandmother’s lemon Bundt cake. It just so happens that they offer that flavor of chocolate bar in convenient 2.5 milligram doses.
Prior to joining the company three years ago, Pot + Pan’s effusive executive chef Tara Cannaday had operated an award-winning wedding cake bakery north of Boston and a French macaron cart in Portland. Flavorful, sweet treats are part of her DNA.
As just one example, Pot + Pan’s Lemon Bundt Cake bar is a custom blended Belgian lemon chocolate bar with crispy white chocolate pearls and offering 10 nuggets of 2.5 milligrams each. The recipe is based on the cake Cannaday remembers eating on her grandmother’s porch in the South. “It takes you on a similar rollercoaster ride of flavors. It’s bright with lemon. It’s buttery. And it’s sweet, but not too sweet,” she says.
Company co-founder KJ Wilson says there is no residual taste of cannabis in these bars because the company custom blends cannabis concentrates that complement the flavors in its products. The company offers a range of products from gummies to baked goods in flavors like ruby grapefruit, sour peach and key lime pie that can be purchased in 2.5 milligram dosages as well.
Pot + Pan currently manufactures these products in their Portland-based facility for sale in adult-use cannabis dispensaries all over Maine. But plans are in the works to open a retail space in Woodford’s Corner.
