Mother’s Porridge

Ingredients

  • 1 ⅓ cups water
  • Salt to taste
  • ½ cup organic thick rolled oats
  • cup organic berries frozen or fresh
  • 1 ½ tablespoons grass-fed butter
  • 2 egg yolks
  • 1 –2 tablespoons maple syrup or honey to taste
  • Chopped roasted nuts and seeds of choice
  • Ground black sesame seed optional

Instructions

  • In a small saucepan, bring water and salt to a boil. Lower heat to medium-low, stir in oats, and continue to gently stir until oats reach a thick soup consistency, about 10–15 minutes.
  • Meanwhile, in a small sauté pan over very low flame, gently heat berries for 3–5 minutes. If using frozen, cook until berries become just a bit saucy. If using fresh, just heat until warm, then mash gently.
  • When oats have thickened, add butter, egg yolks, and maple syrup or honey, and stir until fully combined. Remove from heat. Pour into a medium-sized bowl; top with gently warmed berries, chopped nuts, and ground black sesame if using. Enjoy immediately!
