Sofrito is an aromatic mixture of herbs, fruits, and vegetables used as a base ingredient in many Latin Caribbean cuisines.

- 1 cubanelle pepper or green bell pepper
- 1 to mato
- 1 small onion peeled
- 2 cloves garlic peeled
- ½ bunch cilantro
Instructions
- Place all ingredients in the bowl of a food processor. Puree until you have a chunky but homogenous mix. Store in a glass jar in the fridge. The sofrito will keep for a month if you clean the lid well every time you open the jar.
