The best of both worlds—creamy and bright with herbs—Green Goddess Dressing is wonderful over vegetables or as an accompaniment to grilled, broiled, slow-roasted, or deep-poached seafoods.
Green Goddess Dressing

Materials
- 1 cup mayonnaise or 1/2 cup mayonnaise and 1/2 cup full-fat plain yogurt
- 1 2-ounce can oil-packed anchovies
- 1 bunch watercress trimmed
- 1 bunch tarragon leaves only
- ½ bunch parsley leaves only
- ½ bunch mint leaves only
- Juice of 1 lemon
- Salt to taste
Instructions
- Combine all ingredients in a food processor and purée until mostly smooth and bright green.
