Green Goddess Dressing

The best of both worlds—creamy and bright with herbs—Green Goddess Dressing is wonderful over vegetables or as an accompaniment to grilled, broiled, slow-roasted, or deep-poached seafoods.

Green Goddess Dressing

Materials

  • 1 cup mayonnaise or 1/2 cup mayonnaise and 1/2 cup full-fat plain yogurt
  • 1 2-ounce can oil-packed anchovies
  • 1 bunch watercress trimmed
  • 1 bunch tarragon leaves only
  • ½ bunch parsley leaves only
  • ½ bunch mint leaves only
  • Juice of 1 lemon
  • Salt to taste

Instructions

  • Combine all ingredients in a food processor and purée until mostly smooth and bright green.
