- 3 –4 large firm green tomatoes
- 1 ½ cups flour or bread crumbs
- 1 tablespoon chipotle
- Salt and pepper to taste
- 4 eggs
- 2 tablespoons cooking oil
Instructions
- Slice tomatoes about 1/4 inch thick.
- In a small bowl, combine the flour or bread crumbs with the spices. In a medium bowl, beat the eggs.
- Dip a tomato slice into the eggs. Dredge the dripping tomato slice in the flour or bread crumb mixture and cover it completely. Set aside. Repeat for all tomato slices.
- In a large frying pan, heat cooking oil over medium-high heat.
- Place covered tomato slices in the pan and fry for about 2 minutes per side. They should look slightly browned.
- Set on paper towel–lined plate until ready to use.
