Ingredients

  • 3 –4 large firm green tomatoes
  • 1 ½ cups flour or bread crumbs
  • 1 tablespoon chipotle
  • Salt and pepper to taste
  • 4 eggs
  • 2 tablespoons cooking oil

Instructions

  • Slice tomatoes about 1/4 inch thick.
  • In a small bowl, combine the flour or bread crumbs with the spices. In a medium bowl, beat the eggs.
  • Dip a tomato slice into the eggs. Dredge the dripping tomato slice in the flour or bread crumb mixture and cover it completely. Set aside. Repeat for all tomato slices.
  • In a large frying pan, heat cooking oil over medium-high heat.
  • Place covered tomato slices in the pan and fry for about 2 minutes per side. They should look slightly browned.
  • Set on paper towel–lined plate until ready to use.
